OUR STORY

Behind Sautjan

17

Sautjan = 17

Adam’s favourite number has always been 17. Sautjan means 17 in Icelandic. Elle Chapman is Iceland-born. When getting married in Iceland in 1998, Adam bought an Icelandic suit, and it was branded SAUTJAN. He later learned that Elle played soccer as a youth under the number 17.

Finally, all these years later, he has found that the greatest rums show 17 aroma and flavour compounds, reflected in the brand name.

While Adam is the brains behind what is inside the bottle, Elle is the designer of the brand, name, logo and labels, and is also involved in the final of rums to bear the name Sautjan.

Rum with Provenance, Seasonality & Soul

Sautjan Wild Rum represents a rare convergence of art, science, and terroir. Each release – offered once per season, with only 500 bottles available – is a singular reflection of Chapman’s deep expertise and his passion for traditional, handcrafted spirits.

The product range is purposefully tight, with a focus on two expressions.

  • White Rum – Wild-fermented, unaged, yet richly expressive with complex aromatics and texture.
  • Dark Aged Rum – Distilled for boldness, matured in select barrels, and full of deep, lingering character.

With a commitment to authentic production, Sautjan Wild Rum uses wild yeasts - (Pombe), distillation using a copper pot and double retorts, wild bacteria, cane vinegar, and muck pit techniques to naturally generate esters and fatty acids – delivering bold, layered flavours that set it apart in the world of commercial rums.
